Our Mission

Miles of Maple is a new 2025 organic maple syrup business founded by Dale Herrington, his wife Amy, and their son Miles (hence “Miles” of Maple). 


Dale and his family began tapping trees in New Hampshire for fun in 2024, hanging 40 blue buckets off of maple trees to collect sap. 


This year, Dale decided to turn his passion into a serious business venture. His focus is on producing the highest quality small batch pure organic maple syrup, sourced 100% from trees he has tapped in NH, making it one of the finest maple syrup New Hampshire has to offer. 


Now, he has tapped 2,600 maple trees in the Seacoast NH area. If you're in the area, you might see blue tubing peeking from the maple forests, along with sap bags on some of the smaller lots. Dale has invested in the latest technology, including vacuum pumps, reverse osmosis, and a propane-fired evaporator in his sugar shack. Every day during syrup season, you'll find Dale in his sugar shack, surrounded by the warm scent of maple drifting on the breeze.

Healthier Maple Candied Walnuts

A bowl of glossy caramel-coated walnuts sprinkled with sea salt.

Maple Glazed Nuts highlight the sweet flavor of maple syrup. Heat 1/3 cup of maple syrup to around 234 degrees before adding it to a fry pan with 2 cups of your choice of nuts. Stir constantly on medium - medium high heat for 12 - 15 minutes. When the syrup starts to crystalizes and the nuts are not sticking together, it's done. Be careful, it is easy to burn them. Cool on a cookie pan, separating as they cool.

Warning, we have many reports of glazed nuts addictions!
